Today's Lunch

Smashed Potatoes
baked potatoes smashed with butter, cheese, bacon and chives, topped with sour cream
(in Thermos)
Green Salad
butter lettuce with sliced mushrooms, grated carrot, red onion, croutons and sun-dried tomato vinaigrette
Red Grapes



I baked the potatoes the day before.  Smash the whole potato, skin and all.


Melt butter on a skillet, and heat the potato along with bacon bits.  Once hot, top with cheese and chives.  You can use anything you would normally put on a baked potato, such as cooked brocolli.  Serve sour cream on the side.
